Sweet Potato Pie Chia Pudding

Happy Monday! This post comes a bit late, and it's not even a nut butter! But it does contain nuts. And is maaaaaybe the best breakfast ever. So. I had to share.

If you've ever been put off by the weird, Jello texture of chia pudding, don't worry--once it gets all blended up, it's ridiculously smooth and creamy! The inspiration came from a recipe I linked to a few weeks ago, Smooth & Creamy Chia Pudding from Cookie and Kate. Add some sweet potato and spice and it's basically (healthy) dessert for breakfast!

Sweet Potato Pie Chia Pudding
Makes 1 generous serving
  • 1 1/2 tbsp chia seeds
  • 1/2 cup coconut water (or water)
  • 100g sweet potato (about 1/2 small sweet potato)
  • 1/8 cup raw cashew pieces
  • 1/8 cup raw broken walnuts
  • 1/2 large fresh date (use more if subbing water for coconut water)
  • 1 tsp pumpkin pie spice
  • pinch of salt

Add chia seeds to bowl and pour over coconut water. Cover and refrigerate overnight.

Peel and cube sweet potato. Boil until soft and rinse under cold water.

Add gelled chia liquid, sweet potato, nuts, date, spice, and salt to blender and blend until smooth. Top as you fancy and enjoy!.

Whispering Pines Butter

So the original plan for this luxurious pine nut butter was to post it around Valentine's Day, until I read the warning on the back of the bag of pine nuts; perhaps not the most romantic treat you could make:

Some individuals may experience a reaction to eating pine nuts, characterized by a lingering bitter or metallic aftertaste.

...The metallic taste will go away, and most people won't experience anything, but just be mindful if you decide to make this delicious, fancy butter!

The name comes from one of my favorite tea companies, Whispering Pines. The combination of pine nuts and rosemary is sweet, savoury, and makes a wonderful drizzle on top of pretty much everything. Treat yourself!

Note: Trader Joe's sells Pine Nuts for less than $10 a bag; pretty much the best price you're likely to find.

Whispering Pines Butter
Makes 1/2 cup
  • 1 cup toasted pine nuts
  • 1 1/2 tsp crushed rosemary needles
  • couple flakes sea salt

Crush rosemary using a mortar and pestle, then add to blender with nuts and salt. Blend on high for 90 seconds, stopping halfway through to scrape down the sides.

Terry's Butter

March already! 2016 is just speeding by...Today's recipe is sort of seasonally inappropriate; it's inspired by those chocolate oranges you find around the holiday season. My favourite part is giving them a hard whack on the floor to separate the segments. Terry's butter is incedibly creamy and chocolately; it goes great on toast for a luxurious breakfast. Speaking of which, yesterday I made this amazing smooth chia pudding from Cookie + Kate. I tried chia pudding before and was completely put off by the weird, jello-y texture. But! This stuff blends in cashews to make it actually like pudding. I had it again for breakfast this morning, with a few raw pecans subbed for some cashews, a dash of banana extract to go with the vanilla, and half the number of dates. On top, well, you guessed it-- a big spoonful of nut butter! The recipe for that one is coming in the next post. Be excited!

Terry's Butter
Makes 1/2 cup
  • 1/2 cup roasted hazelnuts
  • 1/2 cup roasted cashews
  • 1 tsp dried orange peel
  • 3/4 tsp raw caco powder
  • tiny pinch salt

Add nuts and salt to blender and blend on high for 60 seconds, stopping halfway through to scrape down the sides. Add orange peel and cacao powder and blend until combined.

Honey Lavender Butter

Has spring sprung yet? If you're still snowed in and looking for a little brightness in your day, try this sweet, flowery nut butter!

This butter is lightly sweetened with honey to balance the bitters; you may wish to add a little more to taste. Wonderful on grilled cornbread with honey drizzle and a few flakes of sea salt!

Honey Lavender Butter
Makes 1/2 cup
  • 1/2 cup toasted sliced almonds
  • 1/2 cup whole raw almonds
  • 1/2 tsp honey, more to taste
  • 10 drops lavender bitters

Add almonds to blender and blend on high for 90 seconds, stopping halfway through to scrape down the sides and add bitters. Gently stir in honey after butter has cooled to room temperature.

Beach Blanket Butter

There's a street in San Francisco called Beach Blanket Babylon Boulevard. The sign is at least twice as long as normal to contain the ridiculous name. Surely, there must by an origin story! Turns out Beach Blanket Babylon is the world's longest running musical revue (music, dancing, sketch comedy) and has had over 15000 performances since its inception in 1974 in San Francisco's North Beach neighbourhood.

This week's nut butter, Beach Blanket Butter, will send you off to tropical locales with its creamy macadamias and sweet coconut. Unlike its namesake, it won't last long!

Beach Blanket Butter
Makes 1/2 cup
  • 1 cup raw macadamia nuts
  • 2 tsp coconut milk powder
  • 1 tsp raw coconut oil

Add all ingredients to blender and blend on high for 90 seconds, stopping halfway through to scrape down the sides.
